Knife sharpening, or 'grinding" as the industry refers to it, has been around for thousands of years. Our team of professional craftsmen and sharpeners have been trained by the best in the business and carry on the tradition of precise workmanship and exacting standards demanded by traditional grinders. Whether it's hollow ground or belt sharpened, we do it best.

Since 2017, Douglas Jebb has been a Connecticut high school girls varsity hockey coach. A couple of years ago, he launched a home knife sharpening service in Fairfield County. Recently relocating to the Charlottesville area, he met Garfield Stowe, the founder of Dragon Knife Co. the top restaurant knife sharpener in western Virginia. Today their companies are keeping Virginia sharp.

Studies show dull knives are far more dangerous than sharp knives. Dull knives & poor cutting surfaces cause 67% of all kitchen knife visits to the ER. Dull knives require more pressure to cut, so the knife or item under pressure often slips & causes the knife hand to accidentally cut the holding hand or fingers. Professionally sharpened knives help solve this issue so cutting is safer and easier.

Keeping VA Sharp was created

The MVP of the kitchen, a Chef's Knife, with its 8" or 10" blade is versatile enough to cut veggies, roasts, steaks and potatoes, and tough exteriors like watermelons, pineapples & avocadoes. Not good for breads and soft fruits. A must-have, and must-be-sharp, to be used safely.

A second must-have, this diminutive actor with a 3" or 4" blade is small enough for peeling apples, potatoes, and other fruits and veggies. The sharper the better as it makes for quick work when appropriately sharp.

Typically long with a 10-12 in. blade sporting numerous small sharp ridges, a serrated knife is best for breads, bagels, and tomatoes (esp. ripe, soft ones). Not to be used for meats as the saw-tooth ridges will shred the good protein you aim to eat. These become dull over
time and need to be sharpened.

A medium sized knife - typically with a 6-8 in. blade - the boning knife has a very thin, sharp blade designed to navigate both the intricate outlines of bones and the annoying gristle to help chefs separate the meat from the chaff. Critical that these stay sharp, most restaurants serviced by Dragon Knife Co. get their boning knives sharpened at least every two weeks.

Similar to a boning knife, a fillet knife is 6-8 in. with a flexible blade useful in preparing fish. The thin blade easily slices along the backbone and under the skin of the fish. Another knife you need to keep very sharp.

The meat cleaver is used for heavy-duty tasks such as cutting through bones, thick cartilage, and large pieces of meat. Ideal for cutting up pumpkins, squash and pineapples. The top, non-blade edge can tenderize meat too. Heavy with a curved blade thats wide enough to be used to crush garlic & ginger. Critical for this knife to be sharp due to its weight & size.
We'll give you four (4) professional grade knives for your use. Then three times a year, we'll deliver to you a set of freshly sharpened knives to replace the original set. This guarantees you'll ALWAYS have sharp knives in your kitchen. Never wait for safe, sharp knives. $75 per visit.
We'll come by, pick up your knives, sharpen & return them back to you within 48 hours at least twice a year. $60 per pickup; up to four (4) knives. Additional knives $10 each.
